Let’s meet Bex!
What initially got you into healthy eating and lifestyle?
I started researching and eating much healthier food when I began following a vegan lifestyle a couple of years ago. But the big lifestyle changes came during my studies at the Institute for Integrative Nutrition. Now I’m hooked, baby! I left my previous career as a Cost Engineer to pursue my passion as a Health Coach and I’ve never looked back!
What is your #1 tip for healing disease?
Taking a big, beautiful look at what you eat, drink and think. Wholesome food (fresh from nature), lots of greens, vegetable juice, filtered water, and positive thoughts are so incredibly healing.
What’s your favourite quick snack?
My friends like to call me ‘Fruit Bat’ because I’m always munching on fruit! I love raw nuts, smoothies, and ‘Bliss Balls’ too.
What are your daily self-care non-negotiables?
Self-care is often the first thing to get pushed aside when we’re busy and yet it’s so important! I’m getting better at ensuring there ARE non-negotiables in my day. They include exercise (at the very least, a walk around the block), wholesome food, lots of water and delicious herbal tea, and writing at least 3 entries in a gratitude journal.
If you could come back as any animal, which one would it be?
Ooh, maybe a Giraffe or a Zebra.
What’s your favourite…
Documentary? Like any true Nutrition Geek, I love documentaries like Food Matters, Hungry For Change, Fat, Sick and Nearly Dead, Food Inc., and Super Size Me.
Book? Right now I’m loving ‘May Cause Miracles’ by Gabby Bernstein and ‘On Writing’ by Stephen King.
Vegetable? Sweet Potato, preferably roasted, with a side of fresh edamame.
Blog? My gorgeous friend Kristy constantly inspires me with her insanely delicious blog, Keepin’ it Kind.
Smoothies or juices? I adore Green Juice but I have to admit I love Raw Choc Smoothies even more.
Can you share you’re favourite recipe with us?
I’m a massive fan of Choc Mint everything, so this Smoothie is one of my favourites.
- 350ml coconut water
- 1 large frozen banana (pre-cut into pieces for easier blending)
- 4 Medjool dates, pitted
- ⅔ cup raw cashews
- ½ avocado (optional – for extra creaminess, nutrition and colour)
- 2 handfuls baby spinach (you won’t even know it’s there, trust me)
- ⅓ cup mint leaves, firmly packed
- ½ tsp pure vanilla extract
- 1 tsp maca powder (optional – I didn’t have any in the house last night and it was still good!)
- Small pinch of sea salt
- A handful of ice cubes
- 3 tbsp raw cacao nibs
- Throw all ingredients except the cacao nibs into a high-speed blender and blend on high for a few minutes until smooth, icy and creamy.
- Pour into serving glasses and sprinkle with cacao nibs.
- Drink through glass straws and giggle with delight every time a little cacao nib works its yummy way into your mouth.
