It’s been a little while since I gave you an update on my health – so I wanted to share some things that have been happening.
Over the last few months I’ve been trying to heal a parasite infection thats been noticeably affecting me since around April. I think that I’m finally healing from that, and most of my symptoms have gone.
I had mentioned in my last health update that I was doing Gerson Therapy to about 85% of the diet, and that it was definitely showing improvement.
For those not familiar with Gerson Therapy, it is a nutritional therapy that includes 13 juices per day, 3 full meals, supplements and coffee enemas. Breakfast is usually oats, but I can’t eat oats so for now I am having fruit. Lunch and dinner are hippocrates soup + a cooked potato, baked veggies, slow cooked veggies, plus salad – with only flax seed oil, apple cider vinegar, some sweeteners and some herbs allowed for dressings.
Gerson is typically used to help heal people from cancers of all types, but is known to heal almost any degenerative disease.
I was feeling so much better doing Gerson earlier in the year that I actually got lazy with the therapy and slowed down my juicing, and starting including a ton of other foods back in my diet, just as I got hit with a parasite infection. I did keep doing the enemas though, which have been such a help with pain and inflammation.
You can probably guess what happened next – I got much worse. Between the parasites and getting lazy with juicing and eating (with the parasite infection I was barely eating because I wasn’t hungry), my health is worse than ever.
I will be coming up to the 3 year mark of being diagnosed with celiac disease in October, and I’m disappointed that instead of healing and moving on with life, I am still stuck and in worse shape than ever. But I have hope.
The last week or so I’ve been working back up to the full Gerson Therapy, and I have to say I feel so much better already. My energy is coming back, my head has been clear for the first time in a very long time.
I’m currently working on finishing my next ebook, The Gluten-Free Vegan Survival Guide – which I am super excited about! It’s full of the basic and must-have recipes like creamy potato salad, chocolate cake, gluten-free wraps and more! I just finished the wraps today and it is so weird to eat a tasty, flexible, gluten-free wrap that doesn’t taste like a chewy sponge.
Once I finish this bad boy, I am diving deep into Gerson Therapy, committing to at least 6 months on 100% Gerson Therapy, starting August 1st. This will be tough for me – it’s a full on, intensive therapy, and requires a lot of time preparing the soup, cooking veggies, salads, juices, coffee for enemas and doing the enemas. And it’s just me here to do it.
It’s also a huge financial burden, mostly because of the massive amounts of organic produce required, the coffee and the supplements.
But I know I can do it, and I’m excited that I am able to be at home and carry out the therapy while I keep blogging away here. I’ll be updating you with my progress on the reg.
