Hello Vedgies!
It’s getting so close to Christmas now and I’ll be taking a few days off to prepare food, clean the house and wrap all the presents (um, yeah, still haven’t done that yet!). It’s going to be a full on few days, so I’m going to make sure I schedule in even more time for my self-care routine, especially meditation.

I take zen proverbs very seriously. Just kidding! To be honest I haven’t been too well the last few weeks (major detoxing going on over here), so I’ve been attempting to swap my regular morning 30 minute walk for meditation.
Meditation has been the hardest wellness practice for me to get into – I have done coffee enemas before trying meditation. But it’s always the things that are the most fear-inducing that are the most beneficial to us and our growth, isn’t it?
I’ve been reading Joe Dispenza’s book, Breaking the Habit of Being Yourself, and it’s bloody brilliant. It explains meditation and manifestation through a more scientific and neurological perspective. I downloaded his meditations (guided meditations are much easier for me) and absolutely love them. It’s a must-read!
Anywho! These crackers are absolutely delicious with their nutty flavour – make sure you also make some Nut Cheese Logs to have on the crackers, they go perfectly together!
Have a beautiful Christmas, enjoy your time relaxing with family (and try not to get caught up in any drama), oh and make some mango salsa! That’s what I’ll be doing. Eating mangoes in a hammock. Life is good!
- ½ cup sunflower seeds
- ½ cup sesame seeds
- ½ cup flax seeds
- ½ cups chia seeds
- ½ cup pepitas
- ½ cup almond meal
- ¼ cup onion, finely diced
- 1 Tbsp garlic, minced
- 1 Tbsp herbs mix
- 1 Tbsp olive oil
- 1 tsp salt
- 1 cup water
- Combine all ingredients and stir together.
- Prepare a large baking tray with parchment paper. Spread the mixture on the baking tray, patting down with a spatula or the back of a spoon to press together. Spread it to about 0.5cm thick (1/5 of an inch).
- Score the crackers.
- Bake 150°C/300°F for 30 min. Check the crackers, removing any along the edge that are cooked. Carefully flip the crackers, breaking into sections if possible.
- Bake another 20 - 30 min. Let them cool down before breaking along the score lines.
- Enjoy!
