I have been using that mustard on everything – baked veggies, salads, sandwiches. It’s so versatile and definitely worth having in the fridge at all times.
Have you tried a massaged kale salad before? It slightly wilts the kale giving a ‘cooked’ texture, even though it’s still raw. It’s really easy and quick to do, but you will get your hands a little dirty.
Here is an amazing base for any kale salad:
Using your hands, massage kale with an avocado + lemon juice + salt until it wilts and gets darker. From there you can add any seasonings and vegetables you like, depending on season. Easy!
Avocado Mustard Kale Salad + How to Massage Kale

Super simple & healthy salad that looks gorgeous, with a spicy kick from the homemade mustard.
Ingredients:
- ½ bunch of kale, washed, stems removed and torn into bite sized pieces
- 1 avocado, skin removed
- 1 lemon, juiced
- ½ Tbsp – 1 Tbsp homemade wholegrain mustard
- pinch of sea salt
- handful of cherry or grape tomatoes, halved
- ¼ red onion, thinly sliced
- zucchini, shredded
Method:
- Add kale pieces, avocado, lemon juice, mustard and sea salt to a large bowl. Using your hands massage the avocado, lemon, mustard and salt into the kale. The kale will turn a darker shade and get a ‘cooked’ texture.
- Mix with the rest of the salad ingredients.
